So last night was a bit of a fail. .
Or actually it started around noon my throat just went itchy like super duper itchy so when I got home I was pretty tired and not in the mood to cook at all.
I was hungry though so uninspired I made this:
3 small garlic cloves
1 onion
A few sundried tomatoes
4 cocktail tomatoes
Olives
Fresh broccoli
Almond milk
Salt
Pepper
Cayenne pepper
Pasta (check that the package does not contain traces of egg)
Start of by frying the finely chopped garlic and onion with some salt and pepper. When soft add the almond milk and some sauce thickener then add the broccoli. After a min add the sun dried tomatoes and the olives.
In the meantime make sure that you have cooked your pasta.
Add the boiled pasta with a little bit of the water from the cook into the frying pan with the veggies. Add the fresh tomatoes and the cayenne pepper. Taste and see if the salt is good.
Unfortunately my first attempt with cooking with almond milk was not a success. I found the taste rather unusual and a bit …meh…
though I also felt “meh” in general so might have been my health status that affected it.
So in the end I added a spoon of pesto.
The pasta really becomes creamy because of the milk but it definitely wasn’t my favorite pasta. Oh well it was a first attempt so can’t expect too much. Still think it was a great idea maybe I just have to work on the execution.
